  • 800g of beef mince
  • 1tbsp of almond flour
  • 2 medium eggs
  • 2 tins of chopped tomatoes
  • 1tsp of garlic powder
  • 1tsp of onion powder
  • 1tsp of chilli powder
  • 1tsp of mixed herbs
  • salt and pepper to taste
  • coconut oil
  • Grated cheese (to top)


Step 1: preheat the oven on 200

Step 2: For the meatballs, add the mince, salt and pepper, the eggs and almond flour to a bowl and mix thoroughly to combine 

Step 3: Take a big pinch of the mince mixture and roll in the palm of your hand until it resembles a ball shape and is not falling apart

Step 4: Place the meatballs in a large heated frying pan with some coconut oil (you may have to do them in batches) brown on all sides and place in an ovenproof dish

Step 5: For the sauce, add the rest of the ingredients to a pan and cook for 3-4 minutes on a low to medium heat, stirring to combine the herbs and spices

Step 6: Pour the sauce mixture over the meatballs and put them in the oven to cook for around 30-40 mins

Step 7: Remove the meatballs from the oven, grate some cheese over the top and put it back in the oven for 5 mins or until the cheese has melted, serve with lots of green veggies or a big green salad
