  • 4 tbsp  coconut flour
  • 1/2 tsp baking powder
  • 4 medium eggs
  • 1 tbsp psyllium husk
  • pink salt (to taste)
  • 1 cup  coconut milk
  • 2 tbsp oil (coconut or olive)
  • 3 slices bacon
  • 3 leaves romaine lettuce
  • 4 cherry tomatoes (quartered)                                                                                                                                 

Instructions

Method

Step 1: Combine all of the dry ingredients in a bowl and mix to combine

Step 2: Add the eggs, 1tbsp of oil and the coconut milk, whisk until well combined, the mixture will thicken up, this is normal

Step 3: Heat your waffle iron

Step 4: Add 1 tbsp of your waffle mixture to the waffle iron and close the lid

Step 5: Cook for around 1-2 mins, continue with the rest of the batter mix

Step 6: fry the bacon in a frying pan with 1 tbsp of the coconut oil

Step 7: place some of the tomatoes and lettuce onto 3 waffles top with bacon

Step 8: serve drizzled with homemade mayo 

Tip! This batter is a lot thicker in consistency to a normal pancake batter, this is so they can be made in a waffle iron, batter makes 6 pancakes the remaining 3 can be kept in the fridge and reheated for the next day.
