2 hrs





  • 1 whole Garlic & herb chicken                                                                                                                                 

For the mayo                                                                                                                                 

  • 1 egg yolk
  • 1tbsp dijon mustard
  • 1 Cup extra light olive oil
  • 1-2 tsp lemon juice



Step 1: Cook the chicken as per instructions on the packet

Step 2: Prepare a salad of choice

Step 3: Plate up salad and chicken and serve with lashings of homemade mayo


For the mayo

Step 1: Mix egg and mustard together with a stick blender

Step 2: Slowly start adding the oil

Step 3: The mixture will start to emulsify

Step 4: Continue blending until all of the oil has been added

Step 5: Add the lemon juice & blend

Step 6: Add salt and pepper

Step 7: Taste your mayo and add more salt pepper and lemon juice to suit

Step 8: Transfer into a squeezy bottle

Step 9: Place in the fridge for around 20 mins to allow the flavours to develop

Tip! Make sure you use extra light or light olive oil for this recipe as the normal one is way too heavy in flavour.
