  • 4 Chicken breasts
  • 1 Tbsp Olive oil
  • 2 tsp Italian seasoning
  • 200g Broccoli (steamed)
  • Salt and pepper To taste

For the sauce

  • 1 Tbsp olive oil
  • 230g  white mushrooms (sliced)
  • 6 slices bacon (fried in butter or coconut oil)
  • 240ml cream
  • Salt & pepper To taste
  • 1 tsp Garlic powder
  • 1 Tbsp Fresh thyme (stems removed)
  • Chopped parsley (for decoration)





Step 1: Preheat oven to 350 degrees

Step 2: Heat a large frying pan on a medium-high heat and add the chicken breasts

Step 3: Sprinkle with Italian seasoning and the salt and pepper

Step 4: Brown the chicken for 1-2 minutes either side

Step 5: Place chicken in an ovenproof dish and bake for 20 minutes or until chicken is cooked through.

Step 6: Leave the chicken to one side while you make the sauce

Step 7: Heat a large frying pan and fry the mushrooms until soft

Step 8: Add the bacon, cream, salt, pepper, garlic powder and thyme

Step 9: Bring your sauce to a simmer until the sauce starts to thicken up a little

Step 10: Add the cooked chicken breasts and broccoli to the sauce and heat through for a few minutes

Tip! Serve immediately with some chopped chilli for decoration (optional)
