  • 4 Chicken breasts
  • 2 tsp Italian seasoning or mixed herbs
  • 200g Broccoli
  • Salt and pepper (to taste)
  • 230g mushrooms
  • 6 slices of bacon
  • 240ml double cream
  • Knob of butter
  • Salt & pepper To taste
  • 1tsp Garlic powder


Step 1: Preheat the oven to 200

Step 2: Steam or boil your broccoli until cooked or use up any leftovers

Step 3: Season the chicken with Italian seasoning and the salt and pepper

Step 4: Heat a large frying pan over a medium-high heat and add the chicken breasts and brown the chicken for 1-2 minutes either side

Step  5: Place chicken in an ovenproof dish and bake for 20-30 minutes or until chicken is cooked through} {Dice the chicken and leave the chicken to one side while you make the sauce

Step 6: Slice the mushrooms and dice the bacon

Step 7: Heat a large frying pan with some butter or coconut oil and fry the mushrooms and bacon until cooked

Step 8: Add the cream, butter salt, pepper, garlic powder, and thyme

Step 9: Bring your sauce to a simmer, simmer for around 3-5 mins or until the sauce starts to thicken up a little

Step 10: Add the cooked chicken breasts and broccoli to the sauce and heat through for a few minutes

Step 11: Serve immediately with some chopped chilies for decoration (optional)
