  • 4 tbsp coconut flour
  • 2 tbsp  sweetener
  • 1/2 tsp baking powder
  • 4 medium  eggs
  • 1 tbsp  psyllium husk
  • 3 tbsp  lemon juice
  • 1 cup  coconut milk
  • 1tbsp   oil (coconut or olive)



Step 1: Combine all of the dry ingredients in a bowl and mix to combine

Step 2: Add the eggs, 1tbsp of oil and coconut milk and whisk until well combined, the mixture will thicken up, this is normal

Step 3 : Heat your waffle iron

Step 4: Add 1 tbsp of your waffle mixture to the waffle iron and close the lid

Step 5 : Cook for around 1-2 mins, continue with the rest of the batter

This batter is a lot thicker in consistency to a normal batter, this is so they can be made in a waffle iron
