2 hrs 50 mins





  • 2 chicken breast
  • 200g coconut cream
  • 2 tbsp tikka powder
  • 100g lettuce
  • 8 cherry tomatoes (halved)
  • 1/2 cucumber



Step 1: Place the coconut cream and tikka powder in a bowl and mix thoroughly until combined

Step 2: Butterfly the chicken breast and lay flat on a baking tray

Step 3: Spoon some of the coconut mixture onto each chicken breast

Step 4: Using the back of the spoon spread it all over the surface

Step 5: Turn over the chicken breasts and follow step number 4

Step 6: Close the chicken to form a breast and place in the fridge for around 2 hours to allow the flavour to develop

Step 7: While waiting for the chicken to marinate place your eggs onto boil and allow to cool then prepare your salad

Step 8: Once the refrigeration time is up place the chicken breasts in the oven for around 35-40 mins or until cooked through and no longer pink in the middle

Step 9: Slice your chicken breast and serve on a bed of lettuce with some cucumber, cherry tomatoes and some boiled eggs

Tip: to cut down on prep time make ahead the night before.
